Have you never done Karazhan? I've been there a few times and it's a lot of fun and fairly straightforward. I could try to help you out if you need. Let me know when you plan on doing it so I can make sure I am not saved to another run.

The 64 is my Warrior... which is a role I'm new to, but I could run KZ as a priest or hunter in my sleep (I've full cleared ~100 times). It was my intention to start a warrior because the best raid leaders I've had have always been MT... so it was my intent to roll this character so I could try to fill that role (assuming there's no major dissent to start or a coup mid-raid).

Sounds good, although getting tanking gear is not the most fun thing in the world.

My druid is moonkin specced right now but I could easily heal there also.

Oh, if you get an opportunity, my jewelcrafter would love to be let into a clear Kara to get to the Consortium vendor. Last time I knew someone doing Kara on Maelstrom, you still needed the attunement to get in, and I hardly do any dungeons with my jewelcrafter.
