I had red lentil pancakes for dinner last night!
Soak ~1 c of red lentils overnight. Drain, and drop in food processor with ~1/2 - 3/4 c water. Mash; if needed, add water to get it to slightly thinner than pancake batter consistency. Move the batter to a mixing bowl, and add 2 eggs, 4 sliced garlic cloves, 1-2 grated carrots, and a grated onion. Add a generous pinch of salt and pepper, and 1 Tbsp curry or whatever spice(s) catch(es) your fancy. Mix. Batter should be ~pancake batter consistency now. Fry on medium-high heat in oil. Eat hot, with chutney or some other sauce.
