I would imagine it goes well with anything mutton usually goes well with.

But unless you've a way to preserve it, I'd not slaughter more than one. The meat'll rot before you get a chance to eat it. And besides, wool's far more useful.

Anything cooked slow. Stews and such mostly. You can make chops, but older sheep're usually tough.

Smoking or salting? [He is genuinely interested] Or have you managed to find a source of ice for an icebox?

In regards to seasoning, mint is a very becoming spice to use with mutton.

Personally, I recommend spices with a fresh flavour or a sharp bite. Garden balm and lemon grass are excellent choices.
