Summer makes me want to cook more, and to eat more veggies (And my favorite farmer's market started back up a few weeks ago! Yay!). What are your favorite ways to prepare and/or serve summer vegetables ( Read more... )

I think it's always the freshness that makes a difference. Fresh mozzarella is way more satisfying so I end up eating less of it. I use the part-skim for cooking since it has less water content and melts better ( ... )

A couple weeks ago I was on a cucumber-tomato salad kick, too -- just the mater and cumber diced up with olive oil, balsamic vinegar, sea salt and cracked pepper. Over lettuce. Nom.

I had marinated summer squash from rawrawfoods.com a couple weeks ago.

Cubed zucchini and yellow squash, with sun-dried tomato, olive oil, onion, oregano,
basil, dill and sea salt.

I'm not quite sure what their process was, but the result was tasty. I have acquired a zucchini and two squashes and will be attempting something similar.

Hmm I love making cacık (aka tzatziki) for a refreshing summer salad.

-A container (roughly 3 cups) of plain yogurt
-2 cucumbers, skinned and diced small
-one clove of garlic, diced
-sprinkling of dill
-fresh mint
-tablespoon of olive oil

If you want the cacık to be nice and thick then drain the yogurt overnight using many layers of cheesecloth or a sterile handkerchief. Cloth does best because the yogurt will find a way through cheesecloth. You will end up with a thick, cream cheese-like yogurt often called labneh. Sooo good. Oh and mix the other ingredients in, chill for an hour and enjoy!
