Today I tried eggs Benedict for the first time (shuddup, it was research for something I thought of yesterday), and DAYUM those things is tasty. I felt rather clever, too, since I ordered the eggs, bacon etc separately as part of a different dish in case I didn't like it...which, I found out later, ends up being a dollar cheaper. :) Smug Q is smug ( Read more... )

I hope the spinach in the Florentine is fresh instead of cooked. I was prevented from learning of my true love of spinach throughout my entire childhood because I was only ever given it cooked...fresh it's nice and yummy and lovely; cooked it looks like something Swamp Thing would have yarked up after a pub crawl.

I catch your meaning. Yes, pre-cooked freeze-dried stuff is horrible, and really not worth it if fresh is available.

Heh heh. I cannot STAND raw spinach. It has to be fresh, but it also has to be cooked - otherwise it's too bitter for me. One of my friends cooks it by putting it in a colander and pouring boiling water over it. Comes out perfect.

Hollandaise sauce is very similar to mayonnaise. (Basically instead of slowly adding oil while whipping eggs like you do for mayonnaise, you add butter.).

NOM NOM NOM Eggs Benedict is my very favorite breakfast dish.

Hollandaise sauce is made from the ambrosia of the gods. Also egg and lemon.

If you like Eggs Benedict, you ought to give Eggs Sardou a shot. It has creamed spinach and artichokes as well as the Hollandaise.

It's my sister's favorite breakfast treat. I'm going to New Orleans next summer, and will probably see it on every menu at every meal, and will therefore get heartily sick of it. :p It is good stuff, though, and I don't even like artichokes!

Mmm, I love Eggs Benedict, muchly! I actually hadn't tried it myself until my thirties, but I am so glad that I finally did because it rocks!
