you could always buy the LIGHT philly cream cheese and the low fat sour creammmm...

Actually, I'm not sure how that would hold up in the cake, since it depends on the fat content for stability... that said, the difference between light and normal cream cheese isn't that much. I'll just have smaller slices of a better cheesecake! :D

This is Brooke. ( I still don't remember the login)

Jen that looks DELICIOUS.

According mine and Andy's KRAFT magazine here, light cream cheese (and other light products) is recommended in ALL their recipes and they guarentee you won't notice a difference in texture, taste or presentation!

And if you're wondering why we have a subscription to Kraft magazine its cause its free and his mom signed us up. They have a very tasty holiday edition though. You've inspired me to actually bring it home to try and see if I can make a cheesecake or something in Ottawa.

... I'll let you know how it goes. I predict badly.

Cheesecake is easy compared to most cakes; just make sure you use a water bath. You can do it in a normal baking pan instead of a springform if you're worried about leakage, but you just have to eat it out of the pan.
