I see that, like me, you wind up with too much pie filling when making pumpkin pies.

Your idea of baking it in ramekins was much better than my plan to make tarts out of it. I never got around to buying tart shells, so it went mouldy in the fridge.

There's still quite a bit in the freezer too; not sure what to do with that. I don't know if it'll bake out ok if thawed or if I should just eat it frozen.

Well, it's just eggs/pumpkin/cream/sugar/spices, right? That does sound an awful lot like an ice cream, although the proportions are probably off.

I think it'll bake OK if thawed. Eggs actually freeze OK, and that's what needs to be cooked in the baking.
