Yeah, Gimli's characterization was utterly wasted beyond "Elves and Dwarves: Overcoming speciesism for the Buddy Trope!". Oddly, I'm more okay with 3) via Joss Whedon's clever use of props and Hulk PUNCH-lines.
Of course, nearly all comedy movies err on body humor/stupidity for 95% of their jokes anyways...
I wouldn't put the hulk punches in #3, myself. One, I thought they were hilarious, but mostly they were clever and unexpected from a film-watching level. If they had had the Hulk bumping his head on things constantly because ha ha! he is so big! then I would have been annoyed.
