The one friend I still have from school, and the couple of friends I have from Uni, all turn 30 in the next year. Tonight was our night out for the first one. Sarah turned 30 last Monday; she is not so bothered by it... just as I won't be when it is my turn. Victoria on the other hand, who is the youngest of us, is dreading the day.

YUM. Eggplant parmigiana. That is an endangered species in this part of the world, but served in every restaurant and just about every household where I was born and raised. I know how to make it, but it is quite troublesome to make it for only two people. My mom would make two casserole dishes worth for us when we were a family of five, and we could polish it all off in one night.

Is Vic a sister, if you know what I mean?

Aubergine is definitely one of my favourites. I tend to gravitate towards it if I spy it on a menu. I have only ever made a dip, or roasted it and put it in cous cous with butternut squash, peppers, mushrooms and courgettes.
