I don't have Celiac's but I have a wheat allergy and I know a lot of people who do have it because we bond and recipe swap. For most people I think it's the same sort of thing - bloating, cramps, throwing up (I got rashes too, but mine's a traditional allergy).
Have you tried giving up bread and pasta etc and seeing if you feel better? For me it was pretty instant. Two weeks on a low allergen diet and I felt so much better, and there's a lot of small dietary changes you can make to help your system recover. It takes a while to get your head round it, but for me now at least, it's really not a big deal at all, and the bread substitutes have come a long way the last few years. If you have questions I'm happy to answer them if I can ♥.
I haven't tried giving up the bread and pasta yet, but that's definitely my next step. It's going to be a challenge, because those are a big part of comfort foods and everything Southern is some version of a comfort food, it seems like. But I'm at the point where I'm perfectly willing to change the diet to see if I can get some relief.

But yes, diet changes make me nervous. Not because I'm not ready to do something like that, but because it's going to be really hard to survive in a family filled with traditional Southern cooking without standing out like a sore thumb for avoiding the best dishes.
I have always cringed at the thought of being that girl who sends back something to the kitchen because it's not right, or who says there's nothing on the menu she can eat. I have pre-guilt over something that I'm not even sure I have, that's pitiful. LOL

I had to prioritize my movie viewing this holiday season. There are several I want to see, but they were the only one I needed to see.
