Transgender people often have trouble finding a public restroom without risking physical attack. gramina found a site they can check to find a nearby unisex or single-stall restroom. There's currently only one restroom in Seattle listed, and that's at the Wild Rose. Let's all keep an eye out for them and improve on the site, eh?

I can think of several unisex restrooms around Capitol Hill. Also, the UW's campus queer group puts out a list of all the ones on campus every year during their Transgender Awareness Week; next time that comes up, I'll try to remember to transfer said list.

Pawinee, the Thai place 'round the corner, has one restroom which is, by default, unisex. IIRC, Liberty Sushi on 15th has 2 ungendered restrooms.
