Okay, so I'm kind of fascinated because I've never made granola in my life, and it just looks so appealing. Couple questions - does the granola stick to the roasting pans? (because that would be bad!) And also, does olive oil affect the taste? I usually use canola oil for sweetish things.

I don't really taste the olive oil, no--I've made it with canola, too and I don't really notice a difference. I suppose it might give it a stronger taste in a smaller batch. You can use pretty much any oil, but I prefer olive.
Nope, it doesn't stick! :) When it starts baking, the granola is really wet from the oils and sugar, and later all the wet ingredients stick to the dry ingredients, not the pan. If you stir it well, there won't be a problem. Though I always have a little something stuck to the pan when I'm done. It's easy to scrape off when it's all done, though.

Mmm, reminds me of how my mom used to make granola every week or two when I was a kid. Best breakfast food/dry snack ever. We didn't use coconut, though (good thing, I'm not a huge fan of the dried, shredded version).
Just as a note, and I may not actually know what I'm talking about here, but I am under the impression that flax seeds go bad (or maybe just lose nutrients somehow?) relatively quickly once they're ground up. So you might want to check on their staying power and compare it to how long a batch of granola lasts.
Totally yoinking this! My kids love the simple recipe I use, but I think all the extras in this one sounds yummy. I'll have to leave out the wheat germ and I'm definitely using the ground flax seed we have instead of whole.
That looks amazingly yummy. I probably would never make it because of having to buy bulk amounts of, for instance, pumpkin seeds just to make this and what if nobody ate it?
