Pasta with marinara sauce? You could make it vegetarian or with ground chicken!

Italian meatball soup(also called wedding soup) sans the parmesan cheese, and obviously use all ground beef/chicken instead of pork :) There are a number of recipes, some including premade meatballs, google your favourite!

Chicken marsala
Chicken scallopine

The above two would be great served with a pasta. You could always go with a pasta bolognese with or without meatballs. There's also pasta primavera with lots of vegetables.

That's all I can come up with from the top of my head, while my brain is addled with Yom Tov cooking!:)

well i like to marinade chicken in italian dressing and then coat (I do this all year round mind you) in matzah meal and stick in the oven, you can always do that and throw some marinara over it...

I highly recommend this book. Has plenty of fleishig and non-dairy recipes.

I second that; it's an awesome book. The roast chicken with orange and ginger is a favorite of mine but be warned, it takes much longer to cook than the recipe says -- I use the Joy of Cooking temp and time with Goldstein's ingredients, plus I slide some citrus slices under the skin for pretty. The Chicken Ezekiel (has olives and a tomato-wine sauce) is great too (the timing on that one is ok).
