Miriam's Baked Oatmeal

I was thrilled when Miriam posted her baked oatmeal recipe in her blog (as a part of a series of overdue emails she was sending). This is seriously good stuff people. I did tweak the recipe for a version that has slightly less oil and sugar so it's "healthier". Hah ( Read more... )

When you guys say quick oats, do you mean instant oatmeal? Think it would work the same with regular oatmeal, cook time wise?

I think instant would work, but not steel cut. The kind that takes 10 or so minutes to cook is what I used (quick rolled oats)

Ah, those are what I use as well. I like the whole foods organic rolled oats. I try to avoid instant.

How different is it from regular oatmeal? Is it good because the top gets crispy? Sounds like it might be a good idea for a brunch.

It gets a little crispy on top, and you can cut and serve it and eat it like that or add warm milk. It is a great brunch food. Noralita called it a breakfast cookie.

This is seriously yummy- I think it's actually Jodi's recipe- that's who I got it from originally! Sometimes I throw different dried fruit in- cranberries or golden raisins, etc.
