February sucks. It's a depressing month and I never accomplish anything worthwhile during it. Luckily, February is gone and I won't have to see it again for another year ( Read more... )

Most of the recipes that I think up on my own turn out horribly. So I usually rely on a few different websites for actual recipes:

1) http://allrecipes.com/
Best. Recipe. Site. Ever. I love this place. You can find whatever you're looking for. Quick and easy? Healthy? Vegetarian options? Chicken recipes? Etc... Pay attention to the reviews. They usually help.

Oh, and a few of my quick, healthy favorites:

1) Combine a Lean Cuisine (Peanut chicken and sesame chicken are both REALLY good) with a bag of Birds Eye steamed veggies. Throw in a little soy sauce and stir. The sodium content is a little high, but that's okay if you're not eating it EVERY day.

2) Beans! Dude, beans are an awesome, cheap, and low calorie source of protein. I like throwing in half a bag of black beans into a slow cooker, adding water to cover, and some garlic and cumin. They're great on their own, mixed with some rice, or even to top a salad.

3) Chicken and Veggies: Grab a chicken breast and your choice of veggies (I usually use broccoli, mushrooms, and carrots). Put the chicken breast down on a pan, spray with a cooking spray, and throw on some garlic powder and Mrs. Dash. Throw the veggies in, spray, and top with some garlic powder. Throw it in the oven.

I am working to cook more/freeze stuff for later in the week. The kitchen where I live now is big enough so I SHOULD be able to do it.

This week it was bad because it was pasta, but wheat pasta. (I cooked too much so I am eating it too often but that will change)

I have a ricecooker and will start doing that with some veggies or beans. I see the stuff above and am going to try some of it out.
