Salsa Verde for Salmon

Thanks to Cook, Eat, FRET I found a great way to serve salmon steaks. Funny Nashville lady's is for tuna so substituted dill for marjoram and orange zest for lemon. I served it with ricotta and spinach ravioli, where the salsa worked equally well.

1/2 cup of olive oil
2 finely minced garlic cloves
finely grated zest of 1 lemon and some orange

Sounds great!

I think I'm going to try it at home (except with pangasius instead, because salmon tastes too much like fish for my little fish-hater)

(With your cooking, I bet he'll come to like it. In any case, I hope he steps away from the Dark Side. :) There are over 40,000 people in Japan over the age of 100, and that isn't from eating blinde vink en frietjes!)

Looks good. We learned a good trick from a friend: cut slivers of garlic and ginger, make slits in the salmon, and slip the garlic and ginger inside. Then fry or bake, as you choose. The meat is suffused with the flavor of the spices and makes a very easy, very tasty dish.
