Good for you! When you say "dry roasting", what do you mean? and after how long braising? I'm used to doing searing, then braising, then pretty much status quo except for veggies. Speaking of which, I'm starting to want to try turnips again. Haven't had them since I was a kid. My mom was hell on vegetables, so every now and then I cook something I remember being awful, and lo and behold! it's usually wonderful. Like parsnips and Brussels sprouts, so far. :) I will never try rutabagas, though! I can't imagine that they'd be any different than I remember.
Oh, I first sear it, then braise it in liquid a while (I think about two hours), then take it out of the liquid, wrap it in foil without any liquid and put in the oven at about 250 for a while (About two more hours) then turn off the heat and just leave it till dinner.
I've never tried turnips, they were really good, sort of radishy-cinnamony after cooking in the stock!
