crock pot should do a fine job of turning it into a stringy dried out mess...
Seriously, while duck has a nice layer of fat the meat itself is VERY lean... that means cook it high and fast and to medium rare. And that my friend equates to

Roast that bird!!
I have a very simple recipe I like....

clean duck, rinse and pat dry. trim wing tips off(they burn too easily)
pre-heat oven to 350F
roast ducky in appropriate roasting pan 2 hours for med-well
during last 20 minutes baste ducky twice with orange marmalade thinned with a little hot water. watch ducky closely, the sugars in the marm can burn quickly... if you're concerned and prefer less carmelization, only baste once 15 minutes before done...

simple and tasty...

weird... one line got dropped...
roasting time... 90 minutes for med-rare, 120 for med-well. or use an instant read thermometer and pull it out then the thigh meat is around 150, breast should be med-rare... be sure to let it rest for 20 minutes after it comes out so the juices can set. otherwise when you cut it they will all run out and you're back to dried out ducky.
