McIntosh...nope. Not IBM compatible. Try Granny Smith or Empire, or both. Also, Cortland also tends to mush, so don't use those.

*snort* I should have expected that joke. Also, I'm not sure about Granny Smith in this recipe. They might be too tart. It actually recommends Gala or the like, I just got the ones I did because they weren't grossly waxed.

Granny Smith's can be tart yes, but a wee bit extra sugar helps that. Also, to update, I spoke to a professional pie maker (believe it!) and she actually prefers Cortlands. She says they only turn out mushy if they were over-ripe, as with any apple.

Oh, and I do hope you are using nutmeg. I leurves me some nutmeg in apple pies. Some people use cinnamon alone, yech. Nutmeg AND cinnamon however, yum yum.

Well, I wasn't baking pie, I was baking sweet potatoes, apples, onion and pork, so no, no nutmeg. ;3
