1. Next time I make creamed spinach, I need to halve the sugar stated in the recipe and maybe add some fresh garlic in with the onion. Also, for having never made a roux by myself and adding the flour too quick and having it come out more solid than liquid, I didn't do too bad. Andy enjoyed it ( Read more... )

I recommend you get yourself a timer/thermometer with a probe. Until I started using one I way overcooked a lot of things, which is the way I was brought up to cook. Even the cheaper thermometer-only devices are great. The problem with them for me is they are too easy to drop into water and then they corrode and are unreliable. Cooking just until the temp is right makes for delicious meals!

The title of your post reminds me of a cute joke: Why do mermaids wear seashells? - Because B's are too small. It's better when it's spoken, not written.
