Canning: Fantasy vs. Reality

Things that I would can, if I were canning:

Apple butter. It's not really jam, and is so nice to have around as a healthy sweet-but-not-too spread.

Quince jelly/syrup. Possibly my all-time favorite thing to put on pancakes. Basically, great for almost anything you use maple syrup for, as long as it's good with a slightly citrusy slant.

I will keep those in mind... apple butter falls into the same category of stuff-that-goes-on-things-I-shouldn't-eat as jam for me, but I do like it. I'm not familiar with quince at all... it sounds like it would be good on ice cream, or maybe oatmeal.

Right, I understand about the apple butter. I am enslaved to the beautiful processed white flour and eat far too many English muffins, sourdough toast, etc. for my own good.

Quince is lightly citrusy in flavor, pretty mellow. I think it would be faboo on either of the things you mention. Also, if you do end up liking it, you'll save a lot of money making it yourself as I think commercial stuff is pricey.
