my friend celebrated her 4 year anniversary by making her boyfriend what she called "hawaii cupcakes" (they have really great memories in hawaii as a couple) which were based on a recipe from this book
the only way we altered it really was by adding the macadamia nuts. ha ha here you go: 2 sticks sweet butter 1 c superfine sugar 2 c self rising flour 1 tsp baking powder 4 eggs 1 t vanilla 1 c drained, crushed pineapple 1/2 c shredded coconut
prehate to 350. cream butter and sugar. sift dry ingredients together. combine all and beat until smooth. add pineapple and coconut and beat 2-3 minutes. spoon bater into 18 paper liners. bake for 20 minutes, let cool for 5 minutes and removed until fully cool.
frosting: 1 c cream cheese 1 1/2 sifted confectioner's sugar 1 T lemon juice 1 t vanilla 1/2 c chopped macadamia nuts
beat cream cheese and confectioner's sugar until creamy. add lemon juice and vanilla. spread on cupcakes and top with chopped nuts.
If you altered it at all, it's different! But I don't think it matters, lots of food bloggers do it, and they also do it in newspapers without paying for the rights. If anything, seeing the one recipe might make more people want to buy the whole book, no?
