Apologies for the bad shots in some of them. It was hard to work fast with a camera with a failing battery, avoiding the steam and hot sauce, with the poor lighting we have in the kitchen. Norton's agent assures me he refuses to work with amateur photographers ever again.

Oh my god you're my hero. This wins the prize for awesome post ahhhh....

I'm still not so sure about how to fry the eggplant; how thin/thick do I cut it and how often do i like, turn the pieces over and stuff? other than that everything seems pretty simple. I don't think we have a rice cooker however.... :/

aHHhhhh i was just looking up edward norton on IMDB and auhhhhhh why does he have to be 36?????

So I cut the eggplant into half-inch slabs, and once the salting was finished, I cut each slab into three. They come out as pieces roughly as big as the tofu cubes.

You'll wanna stir them reasonably often because they'll stick more than the tofu.

If you don't have a rice cooker (they're reasonably cheap and pretty good), then it's just another layer of complexity. It's not too hard to use the absorption method. See the back of your rice packet for details.

Although... Wikipedia gives a bunch of other names. Maybe you Yanks are not so bad after all. :)
