What I'm using dictates what I can store. Dry ingredients will store longer (texas naturals sells honey powder and powdered goats milk that are a base for a lot of my dry masks), fresh ingredients need careful preparation for storage and refrigeration. Usually I'll only mix one mask worth if there's anything fresh or enzyme based (pineapple, papaya, etc) as they aren't as stable and I don't usually want to do another mask within a day or two. Dry I mix a jar at a time (easiest way to mix is shake it anyway) and use a spoonful mixed in the hand with water before application. As long as the ingredients stay dry (cool, dry, dark place is always best for storage) I've not had anything go bad. And a the dry masks I make are moisturizing and make great bath additives as well.
I usually make one application of a product that could spoil (egg white mask, yogurt mask, etc) but a bit batch of stuff that will last (sugar or salt scrub). I think you can make more of the fresh product and keep it in the fridge, but I never want to risk it.
If there are perishable ingredients, I'll just make a one to three day supply. The coconut oil/baking soda, though, sounds like you could make a decent-sized batch. I make a deodorant with coconut oil, cornstarch, and baking soda that yields about 1/2c and lasts me several months.
Be careful with using coconut oil on your face! It can clog pores pretty badly...not everyone has problems with it, though.
Look up the OCM - Oil Cleansing Method. That is what I do for my facial cleanser and moisturizer, and body moisturizer as well as natural deodorant. You can easily swap stuff around to work for you. I'll make a scrub here and there a one time use thing. I have some recipes saved on Pinterest for Face Scrubs I can store I just need to get some jars. I've got oily/dry skin and skin lupus, ocm works amazing and I'm not putting hidden horrible chemicals on my skin no more. I rarely break out or even get a zit, its also way cheaper on the pocket.

Be careful with using coconut oil on your face! It can clog pores pretty badly...not everyone has problems with it, though.
