I use manic panic-style color and vinegar doesn't take the color out. Acids smooth the hair shaft, bases rough it up. For my color in particular as it is a stain, I want to keep the shaft as smooth as possible to try to keep the color trapped underneath. You need to dilute the vinegar though, as too much acid can also be damaging.
never ever ever use baking soda on this kind of dyed hair. I use it to prep my hair for dyeing, and it strips color that hadn't been removed by shampoo in months. You might notice a little bit more run off when you first use vinegar, depending on how recently you've dyed. If there is dye that is sitting on the outside of the hair the vinegar will help lift that, which I prefer because I hate the week of everything my head touching becoming stained.
Use a shampoo with no sulfates in it for best color preservation.
