Equipment
6 commercial sized convection ovens.
Large full sized standing warmer - to hold hot foods in safety zone (potentially useful for Veggie tarts, maybe others)
8 outlets in kitchen-
space in front that will be curtained off has 13 heavy duty outlets - for roasting ovents and rice cookers?

If we can get enough roasters we can cut it into gobbets and brown it on site. If not, we'll have to figure a work around. I'm concerned that texture will suffer if we have to cook it too far in advance, but if we just brown it and then finish cooking it on site it should be fine- I just need to verify how many roasting ovens we have, and how many all together we will need (including those for the pork roast). I'm starting the time table / equipment spreadsheet today- once I've got a decent draft I will send it to you, if you would like.

I'm planning on bringing a meat thermometer so we can verify that everything comes up to temp, and an oven and fridge thermometer. Everything seems to be in sterling condition and perfect working order, but I'll want to be able to moniter the holding warmer at a glance.

I believe she does, and I've been told that she's made super awesome homemade pasta in the past. Best of all- Pasta is very freeze-friendly so it can even be done in batches in advance!

We might still have a two burner electric doohicky out in the garage, and I know that MCG has an electric skillet in the pile o stuff.

That might be helpful! In fact depending on what I hear about serving stuff I may need to find out more about possibly borrowing serving ware.

just double checked - apparently we ditched the electric burnes as no-one ever used them...

the electric skillet is still there at least.

That's okay, Isolde has one if not two double burners that I may be able to borrow.

I still don't know what's going on with the baronial serving ware. If I don't hear by the Saturday I'm going to just make a command decision so I'm not stuck without anything.
