We can definately taste them, but they won't be as good as they will be next summer, so you're going to have to come out and visit then so you can try them at their full impact. :P
We can even make some together when you're out here. :)
I cheated and tried an onion and a beet yesterday when I pulled them out to take a picture. They were nice and pickly and sour-sweet. Next time I do it though I'm going to slip some fresh rosemary in the jar with them since I've got a patch growing in my herb garden.
I'm hoping the cordials turn out ok. I'm experimenting with adding spices to them, I found the recipes online, but I've never tried any that use spices before, so it's definately an experiment.

A friend has recently started putting (peeled) hardboiled eggs in beet juice, along with some other veggies. After about a week the white part has taken on that beautiful color but the yellow hasn't. They taste pretty good, too.
She doesn't know if this use for beet juice is a period thing to do and I haven't had time to look through books.

My recipe for beets went over pretty well at our meeting. They ate almost a whole jar and one gentleman raved about them so much, I'm planning to make him a jar soon.
