If you get a gift in the mail, should you open it then, or wait until the event/date that the gift is for?

Depends on how close to the event you are.

If you're a month out, go ahead and open it, because of the potential of losing the gift or having something happen to it if you inadvertently store it improperly (i.e. a box of chocolate left in the sunny portion of the living room).

If it's a day or two, (up to a week), wait until the event has passed. In between that, go either way.

Since I've read that it's okay to mail Thank You notes before the wedding even takes place, I'm thinking it's okay to open the gifts whenever you receive them.

You forgot the third option, open it and pretend you didn't until the day the gift is supposed to be opened. ;)
