When I first started working with sourdough, I was discouraged by the need to follow the precise timing which required a 12 hr baking schedule. When I read that it was possible to cold proof in the fridge (both the bulk and final proof) I was excited. Until my bread didn't rise even after more than 48 hrs in the fridge. Im glad the pineapple starter is working so well for you!

I met a professional baker a couple months ago who has offered to give me some of his mature sourdough starter once we get into our home. He's been using this one for his sourdough loaves for close to 10 years now! I'm excited to try working with it - such a thoughtful gift to share.
