I'm not sure if boning an entire chicken, stuffing it with a combination of cooked rice, sauteed mushrooms and spinach, tying it up with kitchen twine and then baking it is on my bucket list of things I want to cook ... but it sure should be. And, a recent post by Sawsan featuring
this dish challenged me to try it myself.
It took a bit longer than it should have and since I didn't have access to my computer while I was doing it, but just depended on some notes, it was harder than needed. Still, barring a bit of a tear at the base of the breast, and over stuffing so I had to use toothpicks to close up the back, it went well.
I decided to practice my tying before I was faced with the stuffed chicken so I got out one of my kitchen towels and some twine ...
