Macaroni and Cheese Experiment

Hmmm...after the unusual Ultimate Lady's Macaroni and Cheese, I decided to experiment with my own macaroni and cheese recipe sans Southern brick of mac'n'cheese.  Mostly I sorta wanted to eat a macaroni and cheese dish that was creamy.  The previous batch ended up a huge success with the southern boyfriend.  Greg had seconds!  He normally never has seconds on casserole-like dishes...or even firsts either but that is neither here nor there.  It reminded him of how his mother used to make it back in the south.  AWww.....warm fuzzies.

*cough*

In any case, tonight after getting off of work -EARLY- I decided to retry the recipe but sans the eggs and whatnot and popping in more cheese, some milk, cayenne pepper, parsley flakes, garlic salt, and cumin to the batch to see how it all turns out and then covered the sucker with crushed Ritz crackers on top to bake in the oven.  I sort of did the haphazard thing with my measurements and threw a mish-mash of several different types of cheeses together in varying proportions based on what I liked and didn't liked.  Cheddar, swiss, gouda, monty jack, muenster, and colby.  The smell of the food cooking in the oven sort of fills me with dread as it was a lot of cheese.

-Eating Update-

Sweet jebus, it's tasty...now I realized that....there was a mighty flaw in the fact that I never wrote down what I all put in it and their measurements.  o_o;
