What is it about holidays that inspires cooking disasters? I'm thinking of how my oven still always smells burnt from that damn pie problem I had at TG....

I hope things go ok despite silly Ramsey.

I broke my own rule: never make a recipe you've not tried before for a holiday or special occasion. I thought it'd be okay, as I've been making lots of crusts and tarts lately, and the Gordon Ramsey book is pretty good. But nooooo...

We managed to salvage it. seriouspenguin decided that the broken crust was "rustic" and looked like it would if it were in a book of country cooking.

Hee!

You need yo'self some premade crust. I'm all in awe of your efforts, but.

Dear Mr. Ramsey, I've never heard of you, but what she said: FUCK OFF and take your asscrust with you.

I used to buy pre-made crust because I couldn't be bothered to make it, but I've gotten over that. A pre-made would not have helped me at all in this situation as it was a sweet, top-only crust.

And it might not be Ramsey, but his cookbook editors. The recipe I linked to online has about a paragraph more of instructions than the book. The book is poorly laid out and difficult to read. I get the feeling the book designer was told to fit that particular recipe all on one page if it killed her.

There's nothing quite like remaining totally calm and rational in face of unworkable crust. I love your style. Merry Christmas to you and JT.

Baking always goes better with a little swearing.

Merry Christmas Georgina! And many to that furry little spoilt kitty of yours too!
