Sugar free ANZAC Biscuits

1 ½ c. Rolled oats
½ c. Desiccated coconut
¼ c. Chopped almonds
3 Tbsp olive oil
2 Tbsp honey
2 Tbsp water
Pre-heat oven to 180C.
Combine the rolled oats, coconut and almonds in a food processor. Add olive oil and honey into mix and wiz until combined. Add water and wiz again.
Form little biscuits and lay them on the oven tray with some space in between. Note, the mixture will be crumbly and it will take time to form the biscuits. Bake in the pre-heated oven for 15 - 20 min. until golden brown.
These little bikkies very nice, but don’t expect them taste as “real” ANZAC bikkies.

ANZAC biscuits.

1 cup flour
½ c. Brown sugar
1 cup desiccated coconut
1 cup rolled oats
100 gr butter
1 Tbsp golden syrup
½ Tbsp baking soda
2 Tbsp boiling water

Mix together flour, sugar, coconut and rolled oats. Melt butter and golden syrup. Dissolve baking soda in the boiling water and add to butter and golden syrup. Stir butter mixture into the dry ingredients. Form biscuits and put 4-5 cm apart on greased oven tray.
Bake at 180C for about 15 min. or until golden.
