Grandma's bread recipe

2 quarts warm water
1 package of dry yeast
1/4 cup sugar
1 tablespoon salt
Lots and lots of flour*

Turn on the hot water as high as it will go and let run until it's hottest point. Turn on the cold water as high as it will go. Measure your water. (Note: the hot water trick is my own addition. I was taught I when I was making pizzas and pizza dough and it does work.)

Put water in a very large bowl. Add the sugar, salt, and yeast. Let it sit 5 minutes to make sure the yeast is viable.

After the yeast water starts frothing slightly add in flour and stir it in with a spoon. Continue adding and stirring until you can’t add anymore flour by stirring. Turn onto a floured board or kneading surface. Knead and add more flour as what was on the board is incorporated into the dough. Keep kneading the bread until you can’t add any more flour.

Grease or oil** the bowl in which you stirred the flour into the bread dough and put the kneaded dough into the bowl to raise. (First rub the top of the dough into the oil or shortening so there is some on top.)

Cover and let it rise until the dough doubles in size. Punch it down. Let it rise again. Form into loaves.

Let rise again. bake at 350 for 45 minutes or until they give a hallow noise when thumped with a finger nail.

*Grandma usually used all-purpose flour and so do I when making bread. She added that at the stirring in point you could add oatmeal or other flours in addition to the all-purpose flour. Although if I am going to add another type of flour I usually add it at the kneading stage and incorporate it into the dough by kneading as much of the other type flour in as I can. Items like caraway seed though is put in right at the beginning so they are mixed through the dough.

**I usually use vegetable oil when greasing the bowl for the raising part. Grandma always used bacon grease or lard.

This is an all day bread dough and makes several loaves.

I stayed up way too late last night, I was reading and didn't want to put the book down so now am in zombie mode again. We're going back over to mom's today, Laura and her girls and maybe Rob are going to be here.
