I love Jack Crawford's relationship with his wife Bella (Gina Torres) there is something so sad about Bella's inevitable death and the very real grieving process between the two of them.
Raul Esparza did such a killer job playing Chilton I'm really sad to see him go, it seemed so pointless having him killed off the way they did. Like Freddie Lounds, Chilton was like nails on a chalkboard at first and then I looked forward to seeing his arrogant self.

I do agree with you on the lack of character development with the female characters, Beverly Katz death removed one of the few female characters and now Alana Bloom is now the ill fated lover of Lecter, whom if she survives will have so much baggage to drag behind her. While her romance with Hannibal feels more like a enactment on a schoolgirl fantasy the walls to protect herself that she erects between herself and others is very real and I can only imagine her horror on finding out that the man she was sleeping with was not only a serial killer (one she'd been warned about multiple times) but that he was using her the entire time as an alibi. She is supposed to be able to see into the actions and motives of others the horrible blow to her confidence in herself and her abilities as a professional will be truly painful to see.
