Happy Thanksgiving!

Happy Thanksgiving, american flist!  And wonderful random thursday to the rest of you guys!

I'm headed over the pass to dirtlifegrl's house in the am.  I have sweet potato casserole with far too much butter and a lot of pecans, and homemade cranberry sause.  They're smoking the turkey, which sounds yummy!

I have sweet potato casserole with far too much butter and a lot of pecans, - Ooh, that sounds interesting - it sounds like something my daughter would love! Any chance of a recipe (or a vague outline, if you cook like me!) when you have time?

And gosh... Heart - S2C used to be a big fan! But I think even he would live without them whilst he was trying to sleep.

Sure! And I tend to be more of a "general outline" cook too. But This is an actual-- though somewhat modified-- recipe. it's one of those things you don't make very often, but it is really good!

Sweet Potato Casserole

3 cups cooked, mashed sweet potatoes. I just microwave them and mash with a fork.

1/2 cup sugar

½ teaspoon salt

2 eggs, beaten

3 tablespoons butter

½ cup milk

1 teaspoon vanilla

mix together in a bowl (I use my kitchen aid)

Topping-mix together in bowl

1 cup brown sugar

½ cup flour

½ cup chopped walnuts or pecans-- I usually use more like a cup

3 tablespoons butter, melted

mix half of topping in with sweet potatoes. Pour into baking dish, then add the rest of the topping

Bake at 350 degrees 35-40 minutes

Thank you. I think I'd have to reduce the sugar - sweet potato is sweet enough to our taste - but I will definitely give it a go some dinnertime when D-d is eating here!

You know, looking at it I realized I usually halve the sugar. Forgot to change that! It's still on the sweet side, but very popular. One of my friend's kiddos said (last year) "Wow, I didn't know I like sweet potatoes!" I had to kind of giggle at that one.

My daughter likes them just cut into chunks, sprinkled with salt and pepper, tossed in olive oil and baked.

I HIGHLY endorse this recipe. Ask her about the cranberry sauce too! :)
