We have a huge-ass sour cherry tree in the front yard. Recently we took all the cherries off it, so I've been doing a lot of baking. Made some pies, which turned out all right, but then mum modified her banana bread recipe to accommodate for cherries, and those turned out excellent.
So, I figured I'd put it up. This is both the basic banana bread recipe, as well as the notes for the addition of sour cherries. I suppose one could use rhubarb instead of cherries, but I don't know how that would turn out because I haven't tried it.
The metric measurements were taken by eyeballing my US/Canadian measuring cup because I'm too lazy to use converters, apparently.

Sour Cream Banana Bread
*This recipe makes two loaves. For one loaf, divide amounts by 1/2. But for so much work, one might as well make two, right?
350F [176C] for 1 hour
-1 C [250 ml] butter
-2 2/3C [650] sugar
-4 eggs
-2 tsp [10 ml] pure vanilla extract
-4 C [1000 ml] flour
-2 tsp [10 ml] baking powder
-2 tsp [10 ml] baking soda
-2 C [500ml] sour cream
-1 C [250 ml] ripe banana, mashed (about 3 bananas, though 2 will do fine)
-1 C [250 ml] chopped/crushed walnuts, if you want!
1. combine butter, sugar, eggs, vanilla. Mix well.
2. Add flour, baking powder, baking soda. Mix well.
3. Add sour cream, banana, walnuts. Mix well.
4. Pour into greased, standard/medium-sized loaf pan. [Or line the pan with parchment paper]
Sour Cherry Banana Loaf
To make Sour Cherry Banana Loaf, follow the above instructions for banana bread, but make the following adjustments:
-Use only 3/4 C [188ml] of sour cream.
-Use pure almond extract instead of vanilla extract.
-Do not use walnuts.
-3C cleaned, pitted sour cherries. Drain any excess juice.
-Before adding the cherries, mix them in a separate bowl with an additional 1/2 C [125 ml] flour. Make sure they are completely covered.
-Add the cherries after mixing in the bananas and sour cream. Fold them in using a spatula or a large, flat spoon.
-I strongly recommend lining the pan with parchment paper instead of just greasing. These tend to stick more than plain banana bread.
-When baking, put in for 1 hour. After removing, test with a poker. If they are still not finished, put in for another 10 or 15 minutes.
