peanut butter of the future

Yesterday I made a delicious lemon pie to take to Jacob and Elise's; it turned out so well that we ended up cleaning the pie plate!  It was super easy, as well; you can find the recipe here: www.weightwatchers.com/food/rcp/index.aspx?recipeid=96091.  I also took a picture of it as it came out of the oven:



One piece is 3 points, but I ended up eating 3 (it was the last night of my WW week!), which was 10 points; for more than a third of a pie, that's pretty damn good!

I also tried something interesting yesterday; powdered peanut butter!  I'd been hearing about it for a while, but I finally picked some up at Hy-Vee yesterday.  I got PB2 Powdered Peanut Butter; they have a website with recipes here: www.bellplantation.com/.  You mix two tablespoons of the powdered pb with one tablespoon of water, and voila!  You have creamy peanut butter that's only around 50 calories (1 point).  I was anxious for it to be awesome, because two tablespoons of regular peanut butter is usually 5 points or more.  But, well, it was a little strange.  I spread it on a piece of bread and had it as a snack, and both the texture and flavor were a little weird.  However, by the time I finished my little sandwich, I was convinced that, given time, I could learn to like it.  Also, I think it will be fantastic in recipes; I'm going to try out a chocolate peanut butter pie recipe I found on the website on Sunday, so I'll let you know how that is.  I took some pictures of the peanut butter in action (one just after I mixed it, then the other on the bread), so take a look:





I definitely have high hopes for the future with this one!
