So, a while ago my mom told me about some tasty, tasty vegetarian sloppy joe's that she had made from a Light and Tasty recipe (it's a magazine, if you're unaware). She sent me the recipe, and a few weeks ago I tried it - and loved it! It couldn't be easier, too.
1 small onion, finely chopped
2 teaspoons butter
1 package (12 ounces) frozen vegetarian "meat" crumbles
1/2 teaspoon pepper
2 tablespoons all-purpose flour
1 can (8 ounces) no-salt-added tomato sauce
2/3 cup ketchup
6 hamburger buns
In a large nonstick skillet coated with cooking spray, saute onion in butter until tender. Stir in meat crumbles and pepper; heat through. Sprinkle flour over mixture and stir until blended. Stir in tomato sauce and ketchup. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Spoon half a cup onto each bun.
It makes 6 half-cup serving, each only 2 points! I use Sara Lee Heart Healthy Wheat buns, so with that and a side of oven french fries, my total for the meal was 8 points - not bad at all!
