I was watching Can!Jani last night and the Croquettes ep started. Hina, Ohkura, Maru and Yasu were given a tape that had about an hour's worth of tape on it. They had to find as many croquette places as possible before the tape ran out.
It's a horrible ep to watch if you're not eating, by the way.
The few times I've made croquettes...it came out interesting. The pre-made store bought ones were okay, but the curry-inside ones exploded, resulting in an empty shell. xD We've done homemade ones a few times (and put in two different kinds of cream cheese...one with chives and one with pineapple xD) and the first few attempts were all right, but the second round went much smoother.
I figured out that they balloon during frying, so I had to pack them tiny and tight.
What was frustrating was that the egg would not stick to the patties after flouring. I can't remember if this is something natural with the flour (I know that you use flour to prevent things from sticking to other things) or if it was to do with the fact that the flour we were using was in the freezer. I'm guessing it was a natural flour property... But it was slightly frustrating when the egg would just slide off the patty as if it were coated in plastic.
The other problem was that the panko would flake off (of course) and come to rest on the bottom of the pan. The first few patties would brown in no time and pretty nicely, but the others would take a while longer since the build up of panko on the bottom of the pan messed with how the heat gets distributed.
So! I'm not sure how to overcome these for next time. I could continuously scoop out the panko that detaches from the croquettes. I don't think the egg/flour thing can be helped, though.
I'm tempted to buy a deep fryer just for the purpose of making croquettes...and you know...for when we buy those frozen french fries and tater tots. Which happen like, once every few 6 months or something. xD Though I guess I could use it for when we buy those fish filets...but I like those better from the oven.
