i never intended to turn into some kind of foodie-blog, but ever since i started cooking for myself it's been one of my most noteworthy sources of excitement.
so suck it up & deal with my culinary ramblings or stop reading my lj, creepster.
i made myself the most DELISH impromptu dinner last night. the madre was out so she couldn't get pissed at me for messing up the kitchen. i didn't want just another sandwich, so i improvised. i took my other avocado and guacamolized it. i sauteed onions and turkey bacon and then took them out of the skillet. i split a weight watchers pita in half so it was two separate rounds of bread and put one side down in the skillet. i topped that with 1/4 cup of shredded mozz. cheese and covered the pan so it would get all melty. then i put the onions and bacon down on top of THAT, sprinkled another 1/4 cup of cheese on top, added the other pita half and flipped over my makeshift quesadilla. i cut it into wedges & topped 'em with guac.
and thus my bacon & onion quesadilla was born.
and just as quickly i killed him and ate him with a side salad...mwah ha ha...
then for breakfast this morning i took 1/2 cup of egg beaters and scrambled them with 2 slices of reduced fat swiss cheese, then sprinkled it with some S & P. i made 2 slices of crispy turkey bacon and a piece of weight watchers toast and had some fresh blueberries. it tasted like a big greasy diner breakfast but it was less than 300 calories. boo-yah.
PS- i put away EVERYTHING i used in the kitchen last night & when momsie got home she was none the wiser. so ha.
except then the padre came home and made hotdogs and beans and saurkraut and pulled out 3 separate pots and didn't wash them and stunk up the house like cabbage.
oh well. not my fault.
