one pound of bacon - good stuff, the thick-cut proper smoked kind
one package of pitted dates - we use sunsweet
8 oz of goat cheese - we use an american chevre from Vermont, not too goat-y but quite tangy
lightly salted roasted almonds.
Count the dates. Should be around 32.
Cut the bacon in half (I freeze the bacon for a little bit first to make it easier). Should have around 32. :)
Cut the cheese into 32nds.
Preheat oven to 400.
Cut through one side of the date and bend it open. Put an almond inside, then a section of cheese. Wrap the half-slice of bacon around it so that the free end of the bacon is under the date. Put, with the date facing up (so that the cheese is upwards), on a wire grate over a baking tray. Repeat until all done.
Bake until you smell bacon.
Serve with honey, or maple syrup, or a balsamic vinegar reduction, or alone. :)
