Easy Chocolate Oreo Cake

Jul 04, 2013 23:53

I found this easy but interesting cake. This would be great for you if you loved Oreos (obviously you can also do this with other cookies), or chocolate, or only had a few things in the cupboard to make a treat with. The original website is in Spanish, so here I am providing you with a translated recipe.

This only takes about 20 minutes to prepare, but must be cooled for two hours in the fridge.

Base -
  • 300g (about 5 cups)* cookies
  • 100g (1/2 cup) butter (melted)
Cream -

  • 200 ml (1 cup) whipping cream (35% MG)
  • 200 g (1 1/2 cup) dark chocolate, chopped
  • 50 g (1/3 cup) butter
Topping -
  • 4 or 5 cookies, split
  • handful chocolate chips
1. Start by crushing the cookies in a food processor. You can also do this by hand by putting the cookies in a plastic bag and crushing them with a rolling pin. Use the whole cookie, cream and all.

2. Mix with melted butter and press into the baking pan. If you'd like a crispy crust, remove the cream from the cookies and bake the finished crust for 10 - 15 minutes at 350F (177C). To have a smooth, tidy crust, press the mixture with the back of a spoon. Place the crust in the freezer and prepare the cream filling.

3. Heat the cream in a saucepan over medium heat until it boils. Remove from heat and add chocolate and butter. Give it a moment, then a really good stir to get everything nice and blended.

4. Pour into the base and press your topping cookies and chocolate chips into it and return it to the freezer for a couple of hours. When it's nice and cool, cut and serve!

*the original recipe all being in weight, these conversions are approximate. You may need more or less if creating this recipe by volume, so play a little and see.
