2 dishes = leftovers. the combination of the leftovers = wicked awesome.
- Thai curry cicken & veg:
Thai curry / peanut butter/ginger+lime sauce. chicken, mushrooms, onions, zucchini&chick peas.a slow cooker dish. with jasmine rice.
- Borsch-esque soup.
hot Italian sausage, smoked ham, roast beef + beets, cauliflower, carrots, broccoli, celery, onion and garlic. cooked in a veg stock. hot sauce, 1 sm dried chili pepper and lots of cracked fresh pepper.
cook both dishes as per normal. ( ie cook the meats b4 adding to liquids... etc). make lots, as the second day leftovers of each dish are very good, the goal is to have enough for 1.25 portions per person on the 3rd day, when the 2 dishes are combined. if there are leftovers they should be tossed at this point.
also here's another thing that i pulled out of my hat when i saw that ham and asparagus was on sale .
-Ham wrapped asparagus spears in a honey mustard sauce:
grill asparagus, sea salt and cracked fresh pepper. set aside. make a honey mustard sauce[ white sauce with the honey and mustard], wrap each serving of asparagus spears with thinly sliced ham. arrange in casserole dish and cover with sauce, , cover with foil and cook for 30 min- or until the dish is warmed through. at 350 degree. add cheese = good. parm and cheddar and swiss have been good to me.
