last night's dinner at the funhouse where Conrad lives over in Piedmont, attended by Noah, Phonerz, and Señor Salad:

Bistecca Fiorentina
Conrad got 6 beautiful New York Strips.

steaks rubbed with my 6-spice rub (mix of black pepper, ground garlic, paprika, coriander, cumin, oregano), then grilled 2-3 min. a side on the double grill and then drizzled with olive oil and broiled for abt 3 min., drizzled again and topped with garlic and horseradish (if you're into that kinda thing).

i brought my double grill to his house and got it so hot that it CRACKED ½ the way across it width-wise, a gash in the castiron so large that you could see the orange glow of the burner through it. it also made a BANG! like a gun when it actually cracked and the whole grill actually hopped about 1" into the air. but then, when it was off the heat and cooled, the castiron annealed and the crack closed itself back up. seems to be OK in terms of structural integrity.

Spinach Crème
i took 1/2 a pkg. of salami, 1 diced white onion & a tonne of pressed garlic, had Noah stir that into something of a roux, then added 2 boxes of organic spinage and a small carton of 1/2 & 1/2. bring to a boil, reduce heat and cover, simmer 35 minutes, adding some red onion after 15 mins. and tomatoes after 25.




Oven Fries
slice 8 fucking stupid ass potatoes into fries. fuck potatoes. combine a shit tonne of garlic with bunches of destemmed, diced cilantro and chopped basil, then toss it with the potatoes. put on a baking sheet, drizzle with olive oil, bake 40-45 mins. at 450°

we drank 4 bottles of wine, several shots of 30-yr-old grappa, and Conrad sent me home with a 30-yr-old bottle of mezcal that we'll save for his birthday.

great time. one of the highlights of the year.
