its cold and wet and miserable outside. on a day like today, i recommend eating something spicy. i also recommend spicy food on days when its warm and day and beautiful. and pretty much on any day of the week that ends with the letter y.
we're going to make some Brazilian food tonight, so lets bring the heat. for this recipe we need 2 pork steaks:
different cut than a pork chop, and you're not likely to find this in the meatcase at Safeway or something. they have a higher fat content than chops and a stronger flavor. you could use chops but you need some size on them for this dish.
Bisteca de porco
2 porksteaks
5 cloves crushed garlic
1T chopped parsley
1T lemon juice
1T olive oil
salt and fresh ground pepper to taste
1. combine garlic, parsley, lemon juice, olive oil, salt/pepper
2. brush on the pork steaks
3. let sit in the fridge for an hour
4. broil. 5 minutes a side.
there you go. simple as that.
and now you're saying "thats it? but Chef Jakcass, where's the spice?" aah, yes, i forgot to mention the sauce:
Brazilian Sauce
6 serranos
1 white onion
5 cloves garlic
1/2T coriander
4T olive oil
1/2C lemon vinegar (white vinegar will work)
mash this up in the food processor. slather aggressively.
yeah, that'll get you there. i've toned this down over the years. i used to make it with 10 serranos and it was a real facemelter. by itself, this sauce is gnarly on the mouth, but its a beautiful compliment to a grilled meat. goes great with any type of red meat - beef, pork, lamb. all good. yums.
side dishes? i've got some black beans stewed in Crystal hot sauce, some rice and a fruit salad. nice, basic Brazil meal. all thats missing is a caipirinha. maybe we'll get one of those fine spirits at Cha Cha Cha around the corner from my house this weekend, seeing as how its payday tomorrow. gotta stimulate the local economy.
