... the aim of art is to be aesthetically pleasing, is it not? I cannot see how something that is unsymmetrical and disorderly could ever be considered as 'pleasing'.

Escher, on the other hand, would side with me on saying that you would need a Spanish civil war and copious amounts of Spanish wine to find that sort of work 'art'.

It's not supposed to be a competition. I think you're to accept you don't like one specific type of art and look at another without trying to change it.

However, in the case of the topiaries, I'll admit it's probably more about the fact one is more exposed to the sun and grows faster than for some artistic value.

Hmph, I suppose you have some validity there, although I still say that symmetry is the ultimate form of artistic accomplishment.

The reason as to the result has little bearing on the fact that it has been left to develop to this extent; if one grows faster it should simply bet cut back faster also.
