This was the second week where Wednesday was at least partially dedicated to cooking. I have come to the conclusion that cooking a full-on dinner every night is just not going to work for me, and so a better solution is to cook a bunch of stuff at once, and have most of the parts of lunches and dinners for a few days. So yesterday I made fish cooked in lemon, butter and thyme with green beans and mushroom risotto for dinner (made risotto for the first time! Turned out yummy - eating the leftovers now...). I also made beef stew for tonight (always better after it's been in the fridge, anyway...and there's a scientific reason for it, even!), and brown rice with peas, feta and mint for a future dinner. So all I have to do to have a homemade meal this evening is buy some bread and possibly throw together a salad, then just heat up the stew and add salt/pepper. No biggie! Friday we're going out with my family so I don't have to worry about that, but for the next meal I figure I'll pick up a piece of chicken and cook it in some way with a lemon theme, serve it with the brown rice and something green, and there's another easy (and quick) meal! It was pretty cool to feel like I actually had three meals planned yesterday, since I never do that.
Well, it's a start. I'm trying to get things underway since it won't be too long before baby girl is eating food, and though she won't be eating the same things as we are for a bit, it would be good for us to stop acting like students and start actually sitting down to dinner together.
I want to make some more risotto. It's all gone now, and mm, was it good!
