Muffin Challenge - Muffin 1

I'm starting a new challenge for myself. I seem to be more into baking, than reading, thus my 50bookchallenge has been severely neglected. So instead, I'm baking. Muffins. A lot of muffins. I bought a book The 250 Best Muffin Recipes by Esther Brody, and have decided to bake all, or almost all, 250 muffins within that book, making up the extra with other recipes that I have found from other cookbooks and the internet. Some I have baked already, some are brand new, with brand new baking techniques. I started this on October 27, 2006. Some of my muffin challenge entries will have pictures, some won't. It really depends on a) how I feel and b) if I remember. I'll also post some of the tips and things I learned doing this. Unless otherwise specified, I use a giant muffin pan (3 3/4 inches by 2 inches deep). Also, some of these I'll be baking with the boyfriend, who loves muffins as much as I do, and has one muffin that he will continue to make, and have me make, and I will count it once. Because in the past month I have baked 5 different muffins, and that muffin 4 times. Also, unless the recipe is from the public domain (the internet) or is one I have created myself, I will not post the recipe itself. If you want a copy, email me, and I'll help you out.

I've made this muffin before, apparently on October 30, 2002, which is a little creepy. I used the 2 3/4 by 1 1/4-inch muffin pan, and what is annoying about this pan, and why I rarely use it, is that it is only a 6 cup pan, not the usual 12 cup pan. If I made this recipe again, and I plan on it, the boys that frequent the house love this one, I'd double it, and put it in the giant muffin pan.
This muffin has a cupcake type texture to it. Very much a dessert muffin.

1/250 = 0.4% (sigh)
