Hearty Minestrone

By way of introduction, one of my family's fave soup recipes, which we found via the "Grandma's Kitchen" recipe cards, modified to what we do with it. ;)

1 lb. lean ground beef
6 cups water
1 28-ounce can diced tomatoes, undrained
1/2 to 3/4 cup chopped onion
1 cup each chopped bell pepper and celery
1 cup sliced carrots
2 tsps salt
1 tsp Worcestershire Sauce
1/4 to 1/2 tsp black pepper
2 bay leaves
1 14-ounce can red kidney beans, drained
1 cup shredded or chopped cabbage
1 cup elbow macaroni

Parmesan cheese as desired

In stock pot, put water, undrained tomatoes, onion, bell pepper, celery, carrots, salt, Worcestershire, pepper, and bay leaves. Start flame on high. In skillet, brown hamburger until crumbly. Drain, add to pot. Bring to a boil. Reduce heat and simmer, covered, for about an hour, stirring occasionally.

Add drained beans, cabbage, and macaroni. Cover and bring back to a simmer. Simmer, stirring occasionally, for 30 minutes. Discard bay leaves, and ladle into bowls. Top with Parmesan cheese. For us, this recipe feeds 6.

As Val knows, I had an emergency surgery last week because of excessive feminine bleeding. The surgery was minor, but still a big deal. Anyway, one of my surprises was my weight. I've been in the 290's for a long time now, but when they weighed me for the surgery I was 279. i have NO IDEA how the 11 pounds disappeared -- I've not been able to exercise or anything since the problem that forced the surgery started back in December of 2007, but I'll take it. :)
